Ingredients

1 Tortilla

2 Free Range Eggs - whisked

1 Rasher of Bacon

1/2 Cup Black Beans

1/4 Onion - diced

1/2 Red Capsicum - diced

1/4 Cup Fresh Tomato - diced

1 tsp Olive Oil

Pinch of Chilli

Salt and Pepper

Preparation

Heat half of the oil in a pan.

Add onion, beans, capsicum and seasonings. Add the bacon also.

Once all is cooked take off the pan and place on flat tortilla.

Clean the pan and add the other of the oil.

Add whisked eggs and scramble.

Once cooked, add to the tortilla also.

Top with fresh tomato and a little more salt and pepper.

Wrap the tortilla and place into the oven or a hot pan to toast.
